Scallops and Bacon Skewers


For 4 |  Preparation : 20 minutes |  Marinate: 4 hours | Cook time : 10 minutes 


  • 1.5 pound large scallops

  • 1 pound bacon, thin sliced (or prosciutto)

  • Salt and pepper

  • 2 tablespoons Fresh thyme

  • 4 tablespoons parsley (split in half)

  • ½ cup olive oil

  • 2 cloves of garlic

  • ½ cup Shield Cider

  • Salt and pepper


Chop parsley and garlic.


Rinse scallops and pat them dry.  Place in a glass bowl.


Add oil and cider, thyme, garlic and half of the parsley.  Add salt and pepper.


Mix and marinate in the refrigerator for 4 hours, stirring from time to time.


Preheat the oven to 450°F.


Wrap each scallop in a slice of bacon and place on a skewer.


Place skewers on a baking sheet lined with aluminum foil.


Pour some of the marinade on top of the skewers.


Bake for 10 minutes on each side, basting with marinade from time to time.


Serve topped with the rest of the parsley.
